ingredients of Pumpkin meringue pie
Pastry :
200g flour
100g butter
40ml water
1 tablespoon of sugar
1 pinch of salt
Device :
250g mashed cooked pumpkin
75g blond sugar
2 eggs
1 tablespoon cornstarch
125ml unsweetened condensed milk
1 tablespoon of spices (cinnamon, ginger, nutmeg, star anise… 4 spice mix)
Meringue :
2 egg whites
75g sugar
1 teaspoon vanilla powder

Recipe steps
Mix the flour with the butter, sugar, and salt.
Add water to form a ball.
Refrigerate for 1 hour before rolling it out.
Make the mixture by beating the sugar, the spices, the cornstarch, the eggs then the milk.
Add the pumpkin puree.
Pour the mixture over the base of the pie and bake for 40 minutes at 180°C.
Beat the egg whites, gradually adding the sugar and vanilla.
Spread on the cold pie and caramelise with a blowtorch.
