Nihari Recipe: What is Nihari? A rich, slow-cooked meat stew made with spices and thickened with atta, which is durum whole wheat flour made in the Pakistani and Indian styles. In Pakistan, Nihari is typically prepared with beef, but it can also be prepared with lamb, goat meat, or chicken. Now We are going to make nihari with chicken in this recipe. The taste of nihari is enhanced by the presence of kameeri rotis.

 



Ingredients of chicken Nihari Recipe:



Chicken pieces                                                            1 1\2 kg

Onions (finely cut)                                                        2+ for tempering

Whole-wheat flour(made into a paste with water)         1cup

Ginger\ garlic paste                                                       3 tsp

Fennel seed(powdered)                                                2 tbs

Dried ginger powdered                                                  2 tsp

Hot spices powder                                                        1 tbsp

Red chilli powder                                                           3 tbsp

Salt                                                                                to taste

Clarified butter                                                             1 cup + for tempering

Fresh coriander, and green chillies(finely cut)              for garnish

Nihari Recipe:



Heat clarified butter in a pot and fry onions to golden.


Add chicken and cook till colour changes; add fennel and ginger powdered and cook till dry.


Add ginger\garlic red chillies, water and salt; cook till chicken is tender.


Increase flame and gradually add flour till the gravy thickens.


Add hot spices and leave on dum; heat clarified butter in a frying pan and fry onions; add to pot.


Dish out and garnish with green chillies and fresh coriander; serve
